Can you play Sid Meier's Civilization VII on a Mac?
Short answer: Civilization VII launched on Mac the same day as on PC, and the Steam purchase includes the macOS build. Grapple is only for the Windows version.
What we know
Steam lists Civilization VII for Windows and macOS. The Mac requirements are macOS Sequoia with an Apple M1 8-core chip minimum, an M2 Pro recommended — an Apple Silicon Mac, in other words.
Since the Mac build is part of the same purchase, Grapple only matters if you need the Windows version for something specific.
The Windows requirements list DirectX 12, which Grapple runs through D3DMetal. We haven't run the Windows version through Grapple, so anything about it here is an expectation, not a result.

Nothing verified for this game yet — but here's where to start, based on its DirectX version. If you get somewhere, tell us and we'll put the real settings here. You can change the same options in the app; from the command line, replace <bottle> with the name of the Windows environment the game runs in — bottle is the CLI's technical term for it.
